A medium lemon green coloured dry champagne. On nose it has fairly high intensity aromas of toast, honey, red apple with touch of mineral, yeast and bread. Fairly high intensity acidity with medium bodied and alcohol. Creamy mousse and fairly long length with citrus finish. The flavour intensity is quite high with flavours of lime soda, citrus, floral and touch of mineral, green apple and honey. Refreshing. (93)

幾適飲,但開瓶後要透一透氣後更好。力度強,複雜性足,餘韻亦長,這都反映了這香檳的質素,。口感豐,氣泡在口中活躍跳動似的,頗有活力,好飲。

1989 Krug Collection Brut

Medium lemon coloured with close to pronounced intensity aromas of lemon, caramel, ripe apple, wet hay and touch of lime, floral and bread, this dry champagne has slightly over medium intensity zesty acidity and medium level alcohol. Creamy mouthfeel with slightly fuller than medium bodied. On palate it gives fairly high intensity flavours of ripe apple, vanilla, caramel with touch of bitter lemon, honey and bread. Long length with honey apple finish. (94)

這酒頗精彩。力度及複雜性皆足,餘韻亦長而吸引。口感豐滿,酒的發展也好,只是氣泡有點不足似的,令人覺得欠了些香檳在口的跳躍感,一枝慢慢品嘗的香檳。

2000 B de Boerl & Kroff Champagne Brut

This champagne has medium intensity lemon colour and fairly high intensity aromas of citrus, honey, ripe apple, bread, autolysis, floral and touch of cream and lime. It is dry with fairly high refreshing acidity, medium alcohol and slightly fuller than medium bodied. Creamy mousse with higher than medium intensity flavours of honey, ripe apple, bread and floral. Fairly long length with ripe apple finish. (92)

酒香好吸引,強度及複雜性皆強,令人充滿期望。酸度、酒味及各樣也平衡出色,餘韻亦頗長。只是酒味在口中稍遜了點。總的來說好飲的,不論作餐前酒、佐餐酒品或剩飲也不錯。

Hennessy Paradis Extra Cognac

This cognac has medium intensity copper colour. On nose it gives fairly pronounced aromas of jasmine, orange, apricot, honey, vanilla and touch of caramel. Water brings out tropical fruit notes. It is off-dry with medium acidity. Mellow medium alcohol and fuller than medium bodied, touch of tannin detected. On palate it has slightly over medium flavours of orange peel, honey, apricot and touch of caramel and vanilla. Fairly long length with honey and tropical fruit finish. (92)

口感很醇厚,亦展現了酒的陳年感。酒香強烈複雜有變化,可是在口中複雜性少了。餘韻算長,收結吸引,但如以酒質計此酒只可以比美以前的普通XO,所以有一個價格及品牌升級的感覺。

2009 Morey St. Denis 1er Cru Vieilles Vignes, Domaine Hubert Lignier

This wine possesses fairly deep intensity ruby colour. On nose it has medium intensity aromas of red berry, candied strawberry, licorice and touch of cabbage and earth. It is dry with medium acidity, alcohol and bodied. Medium soft tannin and slightly over medium flavours of red cherry, plum, licorice and rose. Fairly long length with red cherry finish. (91)

早飲的一枝酒,發展仍未充分,現在仍主要是以花果為主,酒力及複雜性中中等等,可喜的是酒在口中比酒香更好,餘韻亦算長,幾好味。假以時日會有所進步,可以期待一下。

1990 Ch. Pape Clement

A dry red wine with deep purple colour. On nose it gives medium intensity noses of black plum, blackcurrant, earth, mineral, vanilla and violet. It has medium acidity, alcohol and bodied. The tannin is ripe and soft at medium level, with slightly over medium flavours of black cherry, black plum, vegetal, licorice and touch of earth and dried herb. Close to long length with black plum finish. (93)

90年的波爾多真的很不錯,只是香氣力度好像差了點。複雜性頗佳,酒體柔順,餘韻悠長。好酒一枝。這酒莊的酒傾向耐藏似的,已是90年酒但仍有活力的,好飲。

1990 Ch. La Mission Haut Brion

A deep purple dry red wine with medium nose of leather, earth, black plum, graphite and touch of prune, herbaceous, mint leaves. Medium acidity, alcohol and bodied with quite high intensity aromas of black cherry, mulberry, licorice, vegetal and touch of earthiness. Long length with black plum finish. (95) Good depth and layer, starting running from the peak now.

有點點深不可測的感覺。酒香力度不算強勁,但很複雜。可是酒在口中表現更誘人,味道加強了,複雜性仍在之餘更有層次感。餘韻亦很長而吸引。令人回味。現在很適飲,過多兩三年可能會開始往下行了。現飲真的很享受。

Medium lemon green colour with medium intensity aromas of lemon, honey, floral, vanilla, cream and walnut. It is dry with medium acidity and alcohol. Fuller than medium bodied with medium flavours of lemon, floral, mineral and vanilla. Medium length with lemony finish. (90)

中規中矩,酒有一定力度與複雜性,餘韻不合乎其身份地短。整體仍算一致,口感亦圓潤順滑,但以這葡萄園的酒來說就有點平凡了。

2009 Leeuwin Estate Art Series Chardonnay

A medium lemon green coloured dry white wine with very high intensity aromas of toast almond, lemon, honey, vinyl chloride, floral and coconut. Medium acidity, alcohol and fuller than medium bodied. On palate it gives quite high intensity flavours of lemon, floral, vanilla, honey and peach. Fairly long length with honey and lemon finish. (92) Powerful and well balanced at high level.

強勁是這酒的一個合適的形容詞。酒力澎湃,酒香複雜性也好,餘韻也頗長,酒在口中複雜性差了點。但這酒早了點飲,仍有一定發展,過多兩三年會更進一步的。現在飲的話要透氣起碼個多小時。
(後話:品飲完後有酒友告知這酒有人評97分,我相信這酒發展成熟後應該會有94分左右,但我不認為值97)

1997 Le Montrachet, Louis Jadot

This dry white wine has a medium intensity lemon colour. On nose it gives over medium intensity aromas of lemon, mineral, vanilla, honey and touch of musk, toast, and nuts. It is quite full bodied with medium acidity and alcohol. The flavour intensity is higher than medium level with lemon, vanilla, toasted almond and mineral, which attacks your palate layer by layer. Fairly long length with oak, honey and citrus finish. (92)

可以用醇厚來形容這酒。酒力算強,餘韻亦有一定長,而且收結亦吸引,酒味亦有層次感,很不錯。只是複雜性應該更好的,雖然現在已不錯,十分適飲,好味的。

Medium lemon green colour with higher than medium noses of grass, sesame, toast, vanilla, almond and touch of lime and glycerin. It is dry with medium acidity, alcohol and bodied. On palate, it has slightly over medium flavours of grass, floral, toast, vanilla and bitter lemon. Fairly long length with citrus and honey finish. (89)

"這就是白亭"?這個問題一直在與會者間提出。複雜嗎?酒力強嗎?餘韻長嗎?酒有活力嗎?這些問題的答案都頗正面的,但是酒在口中的感覺好像散得很快。那是否又代表酒力在口中很弱?可能吧!那不是很矛盾嗎?也不是。這酒的酒力是屬於強襲性的,即是酒一入口時味度真的頗強,但剛一陣子就消失得無影無踪。是否年份問題呢?

A medium lemon coloured dry white wine with fairly high intensity aromas of lemon, floral, vanilla, honey, touch of musk, toast and cream. Medium alcohol and close to full bodied. Barely medium acidity with quite long length of lemon and musky finish. The flavour intensity is over medium with flavours of lemon, honey, floral and touch of toasted almond and musk. Well developed and sign of over-the-peak (92)

覺得這酒早一點飲會較好,主要原因是酸度下降了。酒的發展成熟,餘韻亦長。酒力及複雜性也一致地好,口感也豐滿順滑,只是酸度有點不足而令酒的鮮活性欠缺了點,整體是不錯的。

2004 Bollinger La Grande Annee Rose

Medium onion skin coloured with fairly pronounced aromas of strawberry, bread, citrus, autolysis, mineral, cream and red apple. It is dry with quite high refreshing acidity, no tannin and creamy mousse. Medium bodied and alcohol with tiny persistent bubbles. On palate it has higher than medium flavours of red cherry, lemon, red apple, bread and autolysis. Slightly longer than medium length with red cherry finish. (92) Fresh but ready to drink

04年香檳現在已可以飲,仲幾好飲添。酒的香氣力度及複雜性皆不錯,酒在口中仍然有BOLLIINGER一貫的豐厚感之餘亦有新鮮的感覺,餘韻也算長,只是口中的複雜感比香氣遜色了點。
